- 1 tablespoon chopped onion
- ½ teaspoon minced garlic

- 1 tablespoon firmly packed brown sugar
- ½ teaspoon cracked black pepper
- Flank Steak
- 2 pinches of ginger
Sauce:
- 6 teaspoons water
- 2 teaspoons cornstarch
- Remaining marinade
Makes: 6 servings
Step-by-Step Instructions
- Prepare the marinade. In a large mixing bowl, combine the Worcestershire sauce, soy sauce, red wine, chopped onion, and minced garlic. Add the bay leaf, brown sugar, cracked black pepper, and ginger. Stir thoroughly until the sugar dissolves and the ingredients are well blended.
- Prepare the flank steak. Use a fork to pierce the steak several times on both sides. This helps the marinade reach more of the meat.
- Marinate overnight. Place the flank steak in a plastic container and pour the marinade over it, ensuring the meat is well coated. Cover and refrigerate overnight to allow the flavors to develop.
- Reserve the marinade. Remove the steak from the refrigerator and take it out of the marinade. Set the remaining marinade aside for preparing the sauce.
- Grill the steak. Heat a charcoal or mesquite grill. Place the steak on the grill and cook until it reaches your preferred level of doneness. For food safety, cook beef steak to at least 145°F internally and allow it to rest for 3 minutes.
- Slice the steak. Transfer the cooked steak to a cutting board. After resting, slice it thinly against the grain for tender, easy-to-eat pieces.
- Prepare the ginger soy sauce. In a small bowl, stir together the water and cornstarch until smooth. Pour the reserved marinade into a saucepan and bring it to a full boil, since it has been in contact with raw beef. Boil thoroughly before adding the cornstarch mixture.
- Thicken the sauce. Gradually stir the cornstarch mixture into the boiling marinade. Continue cooking and stirring until the sauce becomes smooth and slightly thickened.
- Serve immediately. Arrange the sliced flank steak on a serving platter and spoon the warm ginger soy sauce over the top.
Pro Tips & Suggestions
- Marinate overnight. Giving the steak plenty of time in the marinade helps develop its bold, savory flavor.
- Slice against the grain. Cutting across the muscle fibers helps make flank steak more tender.
- Try mesquite grilling. Mesquite adds a smoky flavor that complements the ginger and soy sauce.
- Add a little sweetness. For a Black Foodie variation, stir a small amount of honey into the finished sauce.
- Serve with Southern favorites. Pair the steak with fluffy rice, roasted vegetables, or Southern-style green beans.
