  • ½ cup (2 ounces) shredded processed American cheese
  • 1 jar (2 ounces) diced pimientos, drained

Makes: 24 fritters


Step-by-Step Instructions

  1. Heat 2 to 3 inches of Crisco Shortening or Crisco Oil to 365°F in a deep fryer or deep saucepan.
  2. In a large bowl, combine the flour, baking powder, and salt.
  3. Stir together the beaten egg, milk, chicken, and chopped onion, then add the mixture to the dry ingredients. Mix just until everything is moistened.
  4. Drop tablespoonfuls of batter into the hot oil, frying only a few at a time. Cook for 3 to 4 minutes, turning once, until the fritters are golden brown.
  5. Remove the fritters and drain on paper towels.
  6. To prepare the cheese sauce, melt the Crisco in a medium saucepan. Stir in the flour and salt, then gradually whisk in the milk.

  8. Stir in the shredded cheese and diced pimientos until the cheese has completely melted.
