- 1 small head of green cabbage, chopped
- 1/2 head purple cabbage, chopped
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 jalapeño pepper, sliced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1/2 cucumber, diced
- 20-25 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon black pepper
- 1 tablespoon Badia Complete Seasoning
- 1 tablespoon minced onion (dried)
- 1 teaspoon dried rosemary
- 1 tablespoon Harissa paste (optional, for heat)
- 4 cups low-sodium chicken broth (or vegetable broth for vegan)
- 1 cup kale, chopped
- 1/4 cup parsley, chopped
- 2 bay leaves
- Garlic powder, onion powder, cayenne pepper (to taste)
1. Prepare the Vegetables
Chop the green cabbage and purple cabbage into bite-sized pieces. Dice the bell peppers, slice the jalapeño, and chop the carrots, celery, and cucumber. Smash and mince the garlic cloves.
2. Sauté the Aromatics
Heat olive oil in a large pot over medium heat. Add minced garlic first, stirring until fragrant.
3. Build the Flavor Base
