Ingredients

For the Buffalo Chicken Filling:

  • 16 oz cream cheese, softened
  • 2 cups rotisserie chicken, shredded or chopped
  • 2 cups mozzarella cheese, shredded
  • ½ cup mild cheddar cheese, shredded
  • ¼ cup ranch dressing
  • ¼ cup buffalo hot sauce
  • ¼ cup red onion, minced
  • ¼ cup green onion, minced
  • 1 tbsp parsley, chopped
  • 1 tsp garlic, minced or paste
  • ½ tsp salt
  • ½ tsp black pepper

For the Seasoned Breadcrumbs:

  • 3 cups panko breadcrumbs
  • 1 tsp salt
  • 1 tsp black pepper

For the Egg Wash:

  • 2 large eggs
  • 2 tbsp water

For the Homemade Ranch Dressing:

  • 1 cup buttermilk
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp chives, chopped
  • 1 tsp dill, chopped
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp sugar

Step-by-Step Instructions

Step 1: Make the Homemade Ranch

  1. In a medium bowl, combine all ingredients listed under “Homemade Ranch Dressing.”
  2. Mix well, cover, and refrigerate until ready to serve.

Step 2: Prepare the Buffalo Chicken Filling

  1. In a large bowl, add all ingredients under “Buffalo Chicken Filling.” Mix thoroughly.
  2. Transfer the mixture to a parchment-lined sheet pan and spread into an even layer.
  3. Place in the freezer for at least 2 hours, or until firm.

Step 3: Prepare the Coating

  1. In a shallow bowl, mix together all ingredients for the seasoned breadcrumbs.
  2. In a separate bowl, whisk together the eggs and water for your egg wash.

Step 4: Assemble and Fry

  1. Once the chicken filling is firm, cut it into equal-sized squares or nuggets.
  2. Working in batches, dip each piece into the egg wash, then into the breadcrumbs.
  3. Repeat the process: back into the egg wash, then a final dredge in the breadcrumbs.
  4. Press the breadcrumbs firmly onto each piece to help them adhere.
  5. Fry in hot oil (about 350°F) for 3–4 minutes, or until golden and cooked through.
  6. Drain on paper towels and serve hot with your homemade ranch.

Pro Tips and Serving Suggestions

  • Make-ahead friendly: Freeze the breaded bites until ready to fry.
  • Frying from frozen: Increase cook time to 5–6 minutes, or until golden and hot.
  • Want more heat? Add extra hot sauce or cayenne to the filling.
  • Serve with celery sticks, carrots, or over salad for a fun twist.
