Tender eggplant, creamy cheese, and golden breadcrumbs come together in Baked Eggplant, a comforting Southern-style casserole perfect for family dinners.

Featured in The Black Family Reunion Cookbook, this hearty vegetable dish transforms simple ingredients into a rich, cheesy side dish that’s easy to share.

Ingredients

(Listed exactly as they appear in the cookbook.)

  • 2 large eggplants
  • ½ teaspoon salt
  • ¼ cup Butter Flavor Crisco
  • 2 eggs, lightly beaten
  • ½ cup regular or skim evaporated milk
  • Salt and pepper
  • 1 cup shredded American cheese
  • ½ cup shredded Cheddar cheese
  • 1 cup bread crumbs
  • Paprika

Makes: 10 to 12 servings

Step-by-Step Instructions

  1. Prepare the oven. Preheat your oven to 350°F. Grease a 13 × 9 × 2-inch baking dish with Butter Flavor Crisco.
  2. Cook the eggplant. Peel the eggplants and cut them into approximately 1½-inch pieces. Place in a large saucepan, cover with water, and add the salt. Cook until tender.
  3. Make the eggplant mixture. Drain and mash the softened eggplant. Stir in the Butter Flavor Crisco, beaten eggs, and evaporated milk. Season with salt and pepper.
  4. Layer the casserole. Spread half the eggplant mixture into the prepared baking dish. Add half the American and Cheddar cheeses and breadcrumbs. Repeat the layers with the remaining ingredients.
  5. Bake until set. Sprinkle paprika over the top and bake for 30 to 35 minutes, or until the casserole is set.
  6. Serve warm. Remove from the oven and let cool slightly before serving.

Pro Tips & Suggestions

  • Drain the eggplant well to prevent a watery casserole.
  • Use sharp Cheddar cheese for a bolder flavor.
  • Add a little garlic powder for extra seasoning.
  • Toast the breadcrumbs lightly for a crispier topping.
  • Serve with roasted chicken, baked ham, or collard greens.
