Crispy Corn Fritters – The Black Family Reunion Cookbook – Black Foodie Finder

Published:

Golden Corn Fritters with a Crispy Southern Crunch

Light, crispy, and packed with sweet corn, Crispy Corn Fritters are a beloved Southern side dish that can also double as a delicious appetizer or snack. Fried until beautifully golden and served warm, these fritters are crisp on the outside while remaining tender inside. For those who enjoy the classic sweet-and-savory combination, the cookbook even suggests serving them with syrup.

Featured in The Black Family Reunion Cookbook, this easy recipe uses simple pantry staples and frozen or canned corn to create a crowd-pleasing favorite that’s perfect for family gatherings, fish fries, brunches, and holiday meals.

Ingredients

  • Crisco Shortening or Crisco Oil for deep frying
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 eggs, well beaten
  • ½ cup milk
  • 2 teaspoons Crisco Shortening, melted
  • 1 package (10 ounces) frozen whole kernel corn, thawed, drained, and chopped
  • Syrup

Makes: 8 servings

Step-by-Step Instructions

  1. Heat 2 to 3 inches of Crisco Shortening or Crisco Oil to 365°F in a deep fryer or heavy saucepan.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. In a separate medium bowl, combine the eggs, milk, and melted Crisco Shortening. Stir the wet ingredients into the dry ingredients until just moistened.
  4. Fold the chopped corn into the batter, mixing gently until evenly distributed.
  5. Drop tablespoonfuls of batter into the hot oil, frying only a few at a time. Cook for 3 to 4 minutes, turning occasionally until evenly golden brown.
  6. Remove the fritters with a slotted spoon and drain on paper towels.
  7. Serve warm, with syrup if desired.

Tip from the cookbook: Use one can (12 ounces) whole kernel corn, drained, in place of frozen corn.

Pro Tips & Suggestions

  • Drain the corn thoroughly to prevent excess moisture from thinning the batter.
  • Don’t overcrowd the fryer so the fritters cook evenly and stay crisp.
  • Maintain the oil temperature at 365°F for a perfectly golden crust.
  • Serve immediately while the fritters are hot and crispy.
  • Pair with honey, maple syrup, hot honey, or spicy remoulade for a delicious twist.
