A Spicy Soulful Remix of a Classic Southern Dip

When soul food meets Caribbean heat, magic happens—and this Jerk Chicken Rotel is proof. Inspired by the always-on-point flavor combos of @shaydolce and served up hot by @brisheat, this isn’t your average queso dip. It’s a spicy, cheesy, jerk-seasoned explosion that brings bold flavor and warmth to every bite.

Whether you’re hosting game night, pulling up to the cookout, or just need something decadent for your solo Netflix marathon, this Caribbean twist on a Southern classic hits every time. It’s creamy, meaty, full of heat, and best served with chips, plantain strips, or a spoon (we don’t judge).

What makes it pop? That Walkerwood jerk seasoning, tender seasoned chicken, and a melty mix of Velveeta and shredded cheese blended with Rotel tomatoes and chilies. It’s quick, flavorful, and made to impress.

What You Need: Ingredients

  • 2 packs chicken tenderloins
  • 2 cans Rotel (diced tomatoes & green chilies)
  • 16 oz Velveeta cheese
  • 1 can evaporated milk
  • 1 package shredded cheese
  • ½ red onion, diced
  • ½ green bell pepper, diced
  • ½ yellow bell pepper, diced
  • 1 jalapeño, diced
  • Fresh cilantro, chopped
  • Mild jerk seasoning paste (Walkerwood brand)

Chicken Seasoning

  • Salt
  • Black pepper
  • Onion powder
  • Garlic powder
  • Cumin
  • Coriander
  • Chili powder
  • Smoked paprika
  • Jerk seasoning
  • Lime pepper seasoning (optional)
  • Liquid smoke (optional)
  • Walkerwood jerk paste

Step-by-Step Instructions

1. Cook and Shred

Sear or bake the chicken until fully cooked, then shred into bite-sized pieces and set aside.

2. Sauté Veggies

In a large skillet or pot, sauté the diced onions, bell peppers, jalapeño, and half the cilantro until softened and fragrant.

3. Add Cheese and Rotel

Add the Velveeta, evaporated milk, and both cans of Rotel to the pan. Stir until the cheese is fully melted and everything is smooth and combined.

4. Stir in Chicken

Fold in the shredded chicken and continue to stir over low heat until fully heated through and creamy.

6. Top and Serve

Sprinkle shredded cheese and the remaining cilantro over the top. Serve warm with tortilla chips or your favorite dippers.

Pro Tips & Suggestions

  • Don’t skip the jerk paste—Walkerwood brand brings authentic Caribbean heat.
  • Use rotisserie chicken if you’re short on time, and just season it to match.
  • Add more jalapeños if you want that extra fire in every bite.
  • Serve in a slow cooker to keep it warm for parties or game nights.
