Ingredients:

  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup whole milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • Cooking spray

Instructions:

  1. Separate the egg yolks and whites into two large bowls.
  2. In the bowl with the egg yolks, add the sugar and whisk until the mixture is pale and fluffy.
  3. Sift the flour and baking powder into the same bowl, and whisk until there are no lumps.
  4. Add the milk and vanilla extract to the bowl, and whisk until the batter is smooth and well combined.
  5. In the other bowl, use an electric mixer to beat the egg whites and cream of tartar on medium-high speed until soft peaks form.
  6. Gently fold the egg whites into the batter, a little bit at a time, until fully combined. Be careful not to overmix, as this will deflate the egg whites and ruin the fluffiness of the pancakes.
  7. Heat a nonstick pan over low heat. Spray the pan with cooking spray.
  8. Spoon about 1/4 cup of batter onto the pan for each pancake. Cover the pan with a lid and cook for about 3-4 minutes, or until the edges start to set and the top is slightly dry.
  9. Use a spatula to carefully flip the pancakes over. Cover the pan again and cook for an additional 2-3 minutes, or until the pancakes are fully cooked and lightly browned.
  10. Serve the pancakes immediately, topped with your favorite syrup, whipped cream, or fruit.
